Il y a quelques années, je cherchais des pâtisseries qui ne m’écœurent pas en deux bouchées. Je ne les ai pas trouvées, alors j’ai commencé à les faire. D’abord pour moi, puis pour des proches, puis pour des collègues qui revenaient en redemander. Titulaire d’un CAP Pâtisserie, j’ai construit une façon de travailler qui repose sur une conviction simple : le sucre ne devrait jamais couvrir le goût, il devrait le servir. Aujourd’hui je crée des pâtisseries pour des événements qui comptent, avec 30 % de sucre en moins et autant — sinon plus — de plaisir.
